In this new series of the When podcast, we talking about all things Wellness! In the first episode, I am chatting to Dietician Aveen Bannon, founder of Dublin Nutrition Centre. We talk about how to increase our vegetable and fruit consumption, becoming Vegetarian or Vegan and the Flexitarian Diet. Are you eating enough Fruit and Veg, sadly probably not. Made 2 ways - Vegetarian or with meat!

This meal is highly rich in Iron, Protein, Vitamins A and E, full of fibre and and delivers a highly nutritious meal.


Mexican Chilli tacos serves 4 


400gram minced beef or Quorn mince

1 head of broccoli (minced up )

1 onion/3 cloves of garlic

100gram of dried red lentils or 1 tin of drained

2 pkt taco spice (mild) - for adults add chilli 

1 red onion

2 medium carrots

700gram of Passata smooth

1 tb sp sunflower /linseed/rapeseed oil

1 large family packet of Tortilla or Nachos


Serve with….


Mexican Avocado salad with toasted Almonds

2 baby gems

2 mashed or sliced avocados

1 red onion or 2 spring onions 


4 corn on the cobs (optional)


Top Tip: The Broccoli must be either mashed or food processed or chopped to hid but it works!


Garnish

jalapenos / sour cream/ grated cheddar cheese /

1 punnet cherry tomatoes

juice of 1 lime drizzle of olive oil seasoning 1 tsp honey shake to mix

Method

Fry up the onion and garlic.

Add in beef or quorn and mix.

Add in half cup lentil and stir well

Add in small amount of Veg or beef stock *about 200ml and stir well

Add in finely chopped carrot and brocoli and stir

Add in your taco spice mix - one or 2 sachets depending on desired flavour adding some chilli if you would like spicy!

Mix it all together and add in your passata - letting it simmer for 20 mins on low heat

Wash and chop lettuce, tomatoes and onions…

Pop your corn on the cob into boiling water for 15 mins

Slice up avocado

Mix up dressing together - squeeze 1 lime, teaspoon honey and 6 spoons of olive oil - mix well

Serve with grated cheese, tacos, sour cream ….anything at all really
